Creating homemade jams and preserves has always intimidated me. Plus, I wasn’t a fan of all that sugar!
But after learning you could make a Paleo version using honey, I took my chances with a batch of strawberries that were not the best to eat, but I also didn’t want to waste them.
It’s not very sweet, but it is good. Personally, I don’t like overly sweet jams, so this was perfect.
And, as you can tell the color came out so rich that I loved taking photos of it – probably enjoyed it too much!
I stored the easy-to-make jam in mason jars. The small jars would make perfect homemade gifts for friends and families.
Paleo Friendly Strawberry Jam
what I used …
2 pounds strawberries
3 – 4 tablespoons honey
juice of one lemon
What I did …
Rinse the strawberries under cold water and cut off the green stops. Then, cut the strawberries in quarter and place in a large sauce pan.
Add in the lemon juice and honey.
Using a wood spoon, mix the strawberries, honey and lemon juice. Cook on medium heat until the strawberries start to soften, and come to the start of a boil.
Reduce heat and continue stirring every once in a while until the strawberries are all broken up and the jam is your desired consistency.
Once it cools, store in mason jars in the fridge. Seriously, so good, and easy!!!
