This post, and recipe, was originally published in 2013 on a blog I previously wrote. This was a super popular recipe that was also featured on various websites. I can’t imagine a better way to kick off March, than with this very popular St. Patrick’s Day recipe!
Every time I log into Facebook this time of year, I see at least one status having to do with McDonald’s famous Shamrock Shake. Several years ago, and against my better judgement, I tried one. I quickly decided it was not for me.
It got me thinking — wouldn’t it be great if there was a healthier version, available to drink on St. Patrick’s Day? So after a little experimenting, I came up with a vegan, gluten-free, dairy-free, “adult” version that I personally really like because it’s not too sweet.
This recipe makes about two servings, and is packed with healthy coconut-based products from So Delicious — a company whose products I really enjoy.

3-4 ice cubes
several sprigs fresh mint for garnish
Combine all ingredients in the blender and blend until smooth. Serve in a rocks glass with a fresh sprig of mint as garnish.
