You know how you see something on a food blog or Instagram and think, “yeah, right, that’s not going to come out like that!” Well, that’s what I thought about these cupcakes.
No offense to the multiple bakers who give this their own twist, I totally thought these were too good to be true.
I used this recipe from the blog, Six Sisters Stuff, as a basis, but decided not to dye the icing green, or add the “pot of gold.”
Guy, I have to tell you, they were so much fun to make! The first two didn’t come perfect, but then I got into a grove that worked and it was a blast.
It may sound weird considering I can’t eat any of it and really believe in putting healthy things in your body, but I love making box cupcakes that are on the silly side. I think it’s because it reminds me of when I would bake cupcakes with my mom as a kid for school bake sales.
I’d always want to put crazy decorations on them, because I’d tell her that the “prettier ones will sell faster” – even then, I had a sense of business smarts – and she always wanted to tone them down.
