Let me start by saying I typically hate macaroni salad. Weird, right? There is something about the consistency that I’ve never really liked, until now.
With all my food allergies, pretty much any traditional macaroni salad would be out. But, this one, I tailored around them, for the most part.
You can pick your mayo and your pasta. That said if you use a mayo alternative, you can make this vegan, or if you use rice past, it can be gluten free.
Simple and Easy Macaroni Salad
1/2 pound elbow macaroni
1/2 cup mayo
1/4 teaspoon mustard powder
1 tablespoon apple cider vinagar
1/4 cup red pepper
1/4 cup celery
What I did ….
Cook the macaroni according the directions, then rinse well under cold water and let drain.
In a large bowl, combine the remaining ingredients. Mix well.
Add the well-drained macaroni, and mix well.
Refrigerate for several hours before serving.
