As part of my Unemployment Adventures, I promised you budget-friendly, but still healthy food ideas. This one pan sweet potato and egg scramble is one of them.
I know, I know, it looks a little funny. The eggs are a bit dark. But, it’s just because you are cooking it all in the same pan. It tastes amazing. Plus, you can serve this by itself, on an English muffin or in a tortilla.
So, the reason why this is budget friendly is because all the ingredients are pretty cheap, and staples you like are already using in other dishes. The peppers and onions were left over from dinner the other night, and I always keep sweet potatoes and eggs on hand, because both are not that expensive. Because it’s packed with veggies, it’s also pretty healthy.
When it comes to the oil, I picked up a bottle of flax seed oil at a local discount store and have been using it for months. Another tip, if your sweet potatoes are looking a bit funky, dice them up and freeze them. I do this all the time and then just throw them in the pan frozen to make this or other dishes.
One Pan Budget Friendly Sweet Potato & Egg Scramble
what I used …
2 eggs well beaten
1 small sweet potato, diced
1/4 cup (or more) red or green pepper, diced
1/4 cup (or more) onion, diced
oil (I used flax seed)
what I did …
Heat a little more than a tablespoon of oil in a medium pan on the stove. Add the potatoes, as well as the sea salt, cracked pepper and paprika to taste, plus a pinch of garlic powder.
Once the potatoes are almost soft, add in the peppers and onions. Cook until they just begin to soften.
Make sure the heat is on medium or low, and add in the beaten eggs. Continuously stir to make sure the eggs don’t burn.
Cook until the eggs are the way you like them and serve.
