Avocado, Bacon & Tomato Toast

Avocado, bacon and tomato toast is super easy and makes an impressive breakfast or brunch.

It does’t even require a formal recipe. Once you know how to do it, you can modify it to your liking.

Toast your favorite bread or muffin. Top with smashed avocado, pieces of bacon and sliced cherry tomatoes. Sprinkle with sea salt and fresh ground pepper to taste!


Super easy, right?

Because of my food allergies, I make my “toast” from a modified paleo english muffin recipe. This is my go-to recipe for pretty much everything, except I switch out the flour since I can’t have almonds. I’ve used oat flour, and lately my favorite is amaranth flour.

This is also super easy to modify! To make this vegan, leave off the bacon and make sure the bread is vegan-friendly. To make it vegetarian, just take off the bacon.
