This weekend included some fabulous homemade meals.
Let’s start with my vegan, gluten-free stir fry, which I added sautéed bay scallops to for my dad to who was visiting. He bought me my new wok for Christmas, so it was just appropriate that the first time I used it was to cook him dinner. Such a colorful meal!
On to brunch. My favorite meal.
Check out these gluten-free multigrain pancakes. The batter was a little thick but tasted awesome. The heart shape was not deliberate.
Sunday I had to get out the door to help a friend at the winter carnival, but not before making a quick and easy brunch that included organic, cage free eggs, uncured bacon, allergy friendly “bread,” the best strawberries I’ve had in a long time, Mexican blended coffee and a mimosa.
So yum.
Dinner, was likely the best swordfish steak I’ve ever cooked. I let it defrost in the fridge without soaking it in water and I think it made a big difference.
Light coating of olive oil and then heaviy sprinkles Pensy’s Northwoods seasoning on it. Served it over some wilted spinach and sundried tomatoes.
