Paleo, Gluten-Free Pork Meatballs

Paleo, Gluten-Free Pork Meatballs

by Michelle Maskaly

Lets file these pork paleo meatballs under foods I never thought I would be cooking or eating.

They came awesome and were so simple.

And, so easy to make paleo. Think about it, “traditional” meatballs usually get their flavor from seasoned breadcrumbs. So, with these, you just add the seasonings and skip the crumbs.

Make sure to check out the short little video I shot one of the times I was making these meatballs!

what I used …

1 pound ground pork

1 tablespoon parsley

1 teaspoon basil

1/2 teaspoon oregano

1/2 teaspoon crushed red pepper (for less spicier, use 1/4 teaspoon)

1/4 teaspoon granulated garlic

what I did …

Combine all the ingredients in a bowl, and using your hands mix well, making sure that all the seasonings are evenly distributed.

Roll the mixture into small balls and placed on a lightly greased pan.

Bake in a 375 degree oven (I prefer a toaster oven) for about 10 minutes. Then, switch it to broil and broil until they start to get golden.

Eat as is or drop in tomato sauce and let cook longer until you’re ready to eat.

notes …

These freeze really well. Just layer them between wax paper.
