Seriously, this White Bean and Artichoke Hummus will take you minutes to make. So fast, so easy, so good!
Plus, it’s vegan and gluten-free. One tip I will give you when making this, use really good olive oil and don’t measure it – or the spices Ok, actually that’s two tips, but my point is, use your judgement and flavor pallet. Some people like more pepper while while other people want more parsley. Same with olive oil. I like it somewhere in the middle, but go by what you like!
White Bean and Artichoke Hummus

1, 15.5 ounce can cannellini beans (drained and rinsed)
1, 14 ounce can quarter artichokes in brine, (drained quickly rinsed)
juice of one lemon
fresh ground pepper
extra virgin olive oil
Put the artichokes and beans in a blender with several tablespoons of olive oil, along with the lemon juice, a sprinkle of parsley, sea salt and pepper. Pulse until almost smooth.
Serve immediately or chilled. If you desire, drizzle a little olive oil over the top before serving.
