This zucchini quinoa bowl (with Beyond Meat crumbles) is super easy and used up many of the things in my fridge.
I had leftover quinoa, an open bag of Beyond Meat Crumbles, a half cut zucchini from the garden, a half a pepper and two open bags of organic tortilla chips from Whole Foods.

This is what I did:
Heat 1 to 2 tablespoons olive oil in a pan. Add in shallots, pepper and zucchini. Season with sea salt and cumin to taste.
Once they start to soften, add in the beyond meat crumbles and cook until the crumes are heated and the veggies are soft.
Heat the leftover quinoa in the microwave for a minute or two (depending on the power of your microwave/how much you are heating)
Put the veggie and Beyond Meat mixture over the heated quinoa and then arrange the chips alternating blue and white.
