This Fast and Easy Grilled Eggplant is so simple and versatile. Vegan, and gluten free, it can be a main meal or a side dish.
Last night I ate it as my meal with leftover tomato sauce on the side.
Take slices of eggplant (I actually used presliced from the store) and brush each side with a mixture of olive oil, sea salt and fresh ground pepper.
Grill, flipping once, until the eggplant is soft. This should take a total of about 5 minutes.
Easy, simple and healthy!
