Simple Blueberry Smoothie

It’s been a while since I made smoothies, simply because since I have been working from home, I have been jucing more, and overall, I tend to like my juice slightly more. Plus, it’s been so cold, that honestly, drinking something frozen has not been on the top of my priority list. 

However, two things — my friend Jen made a delicious one last weekend while I was at her house, and the warmer weather is coming, and I who doesn’t love a cold, refreshing smoothie after a hot outdoor activity like a morning dog walk. 

This is refreshing with a slight hint of vanilla, and is also vegan and gluten free. Enjoy!

  

Simple Blueberry Smoothie

3/4 to 1 cup frozen, or fresh, blueberries 

3/4 cup coconut milk beverage (I use So Delicious)

1 organic banana

1/4 to 1/2 teaspoon pure vanilla extract (depending on taste)

Blend everythig together, and serve! Add more coconut milk as need if it is too thick. 

Enjoy!
