Earlier this year I was on a hunt for easy, vegan, gluten-free pancake and waffle mix. Oh, and yes, somewhat affordable. I tested a bunch of ones that were readily available at the local supermarket.
I ended up settling on Cherrybrook Kitchen’s gluten-free, wheat-free pancake and waffle mix. It is also peanut, dairy, nut and egg free, as well as vegan. Honestly, I didn’t have much hope for it, but I ended up loving it. All you need to make it is oil and dairy-free milk. It is what I used for this Cinnamon Apple Maple Bacon Covered Vegan Gluten-Free Waffle recipe, but feel free to use your favorite waffle mix.
Cinnamon Apple Maple Bacon Covered Vegan Gluten-Free Waffle

1/4 cup maple syrup
1/2 – 1 teaspoon cinnamon
Quarter the apple, and thinly slice each quarter.
Put all the ingredients in a small pot and cook over covered medium heat until apples are soft. Stir occasionally.
Once the apples are soft, spoon over cooked waffle, and sprinkle with coconut bacon.
